We are pleased to introduce John Costelloe as he begins his new role as Director of Sales at Ireland's very prestigious K Club. With a background in luxury hotels and resorts, John is not new to hospitality. He brings with him a wealth of experience across the tourism industry from his previous roles working with Tourism Ireland in both the United State and Germany as well as leading DMC, Event Partners Ireland. A man clearly passionate about the Emerald Isle, John is excited to share the magic of The K Club and its exclusive use Straffan House with travel advisors while understanding what he can do to make their clients' stays most enjoyable.
With over 14 years of experience working in the luxury hospitality industry, we are thrilled to introduce Janine as The Fitzwilliam Hotel Belfast's new director of sales and marketing. Originally from Northern Ireland, Janine began her career in Belfast before moving to Edinburgh where she went on to work within the city's best five-star properties. Now, Janine is happy to return to her roots in Northern Ireland (with a Scottish husband and two children in tow!) where she enjoys the balance of working in the city and spending quiet weekends in the countryside.
While she is not a new face at Castel Monastero, we are happy to see Francesca take on the exciting role of sales manager. Various experiences in different areas of tourism eventually led Francesca to the hospitality industry where she started as the event manager of Rocco Forte's Hotel de Russie in 2005. When life brought her to Tuscany in 2012, Francesca began her journey with Castel Monastero as the spa manager with a special focus on wellness related sales. Now, she is proud to have been promoted to this new role where she is thrilled to be taking on a new challenge and is looking forward to a new season full of exciting events.

We are quite delighted to begin working with Sudarshana (also known as Sue) as she begins her new role as Sita's general manager of North American leisure sales. Sudarshana brings with her over 16 years of professional experience across a variety of diverse roles and companies including British Airways and American Express. Joining Sita from Micato Travels where she headed the FIT department for the US market, Sudarshana brings with her strong product knowledge & operations experience. We look forward to meeting Sue next week as she joins us in New York and I'm confident she will be a great addition to Sita's North American team.

Assorted Pizzas alla Hotel Byron (Forte dei Marmi)
Towards the end of last year, we held several cooking events where some of our General Managers cooked dinner for advisors. We will be sharing the recipes used at these events with you over the next few months, starting with "Assorted Pizzas Byron" prepared by Salvatore Madonna,Owner and General Managerof Forte dei Marmi's Hotel Byron. Buon appetito!
Step 1: Prepare the dough.
Ingredients:
-2 1/2 cups medium strength (all-purpose) flour
-2 teaspoons salt
-6.5 ounces water (room temperature)
-1/4 teaspoon Brewer's yeast (fresh)
This recipe will yield one 9 oz. dough ball suitable for a personal pizza. Multiply the ingredients for additional dough balls.
Begin 24 hours before: In a large bowl mix the water, salt, brewer's yeast & half the flour until you have a creamy consistency. Add remaining flour little by little until the dough ball becomes easily workable. Place dough ball into a covered box and refrigerate in the coldest part of the fridge. 5 hours before: Remove dough from fridge & divide into balls if you're making more than one pizza. Dust with flour, return to covered box and leave to rest on counter. To prepare pizza: Roll dough into desired shape.
Spread a thin coat of tomato sauce on pizza leaving 1/2 inch edge. Sprinkle fresh but dried mozzarella on top. Chop and top pizza with fresh basil and bake for 8 minutes, checking often not to burn.
Layer dough with mozzarella and bake. When pizza is done add strips of good quality prosciutto & sprinkle generously with arugula. Lightly sprinkle with extra virgin olive oil.
Prepare the same as "Claudio's Margarita", adding reconstituted dried porcini mushrooms which have been sauteed with a bit of garlic and parsley. Bake for approximately 8 minutes.
Layer dough with a small amount of mozzarella. Coarsely chop some anchovies in oil & sprinkle on top. Add a pinch of hot pepper, chopped black olives, chopped parsley & bake 8 minutes. Add extra virgin olive oil.
